‘Touch’ vs. ‘Latch’ automation recording...

Can anyone clarify for me the functional difference between these two? I thought I understood the manual, but in my experience they seem to produce the same results. What am I missing?

    If you have existing automation ... and you start record new one over this existing, then:

    • touch mode - it records JUST your tweaks - rest before / after stays unchanged
    • latch mode - after you STOP tweaking, it contiunes record last set value (eg. it overwrites your old automation with this value)
